Flash pasteurisation is also called ‘high-temperature short-time’ pasteurisation. It results in a superior juice as the flavour is not ‘cooked’. The pasteuriser is easy to use: fill the tank with water to the level sensor and switch on the pasteurizer. Set the desired temperature for pasteurizing and wait for the green light to go off, indicating that the pasteurising temperature has been reached. Heating time is normally 20 – 30 minutes. Fill the upper tank with juice, use the digital thermometer to control temperature, and start filling bottles by pressing them against the outlet valve. For bag-in-box filling, empty the upper tank, disconnect silicone tubes, and replace the bottle-filling table with the bag-in-box table. Refill the tank, set up a bag, and start filling when the desired temperature is reached.
